Cupping and Trainings at the Warehouse

Friday, November 6th, 2009

One of the joys we have is meeting new people who are interested in joining the world of specialty coffee and working with them to help understand coffee and espresso fundamentals. Today we had the privilege of working with Lena and Nicole who are opening East Avenue Coffee House in Wenonah New Jersey.

It’s always refreshing to see enthusiastic people wanting to learn good fundamental skills in espresso drink preparation and Lena and Nicole had more than their share of enthusiasm. They spent the day working with Chris on espresso extraction and milk steaming techniques and will be working with Katie in a couple weeks on latte art and building drinks. This foundation will be so important for them and we are really excited for East Avenue to become one of the premier coffee destinations in South Jersey.

So keep an eye out for there grand opening and stop by East Avenue in Wenonah when you have a chance.

We also cupped two great coffees today one was our Mexican Chiapas Fair Trade Organic which really sparkled with spice and floral tones. This is a perfect coffee to enjoy with your pumpkin pie after Thanksgiving dinner.

Also on the table today was our Raccoon Creek Blend which was deep and intriguing with winey tones. Soft berries and chocolates rounded out this coffee.

Customer Cupping Recap

Friday, October 30th, 2009

We had a great customer cupping today at the Roastery, eight friendly faces from our retail cafe showed up to sample three different coffees and learn how we roast our coffee. Chris McLaughlin our head roaster roasted a batch of Big Ring Blend for everybody so they saw first hand how we roast our coffee.

Then it was off to the cupping table for three coffees to cup. First was a dark roasted Java that had a nice sweetness in aromatics but was more standoffish in its tastes. There was a tangy smoky caramelly flavored with a slight honey note on the back end. Of the three this was not my favorite.

From there we went to a nice Honduras Marcala Fair Trade Organic that was rich and sweet in the aromatic and softer much more accessible with chocolate, caramel and floral tones.

Lastly we cupped our Ethiopian Idido Misty Valley which was inviting and welcoming with big berries in the aromatics and a sweet sugary berry and chocolate tone in the cup. By far this is my favorite today and I am glad that Chris listened to me and roasted this slightly lighter than normal I really believe it brought out the sweetness and berries.

Our next customer cupping will be in January after the Holiday’s so stay tuned and we will let you know when it’s happening… Ron
